Chicken Paella. Shrimp, Mussels, Clams, Rabbit, or Chorizo are all ingredients you can use in the dish. Spanish Saffron, Nora peppers, smoked paprika, short grain rice, Spanish olive oil, diced bell peppers, garlic, chicken broth and salt to taste. Some people use a fresh ground white or black pepper, personally I'm a Cayenne red pepper
guy. Do NOT substitute the rice. Medium or short grains absorb about 1/3 more liquid

If I use shrimp, clams, or mussels I use a dry white wine, garlic and broth to open the shells or just add a pink to the shrimp. The broth is added to the rice about mid-way
and the shrimp or shells are added, the last 2-4 minutes to the top of the dish. The shrimp should snap if they are fresh and NOT overcooked.

This is a 13" pan. I use an 18" for larger gatherings. It's one of my favorites and there are NEVER any leftovers.

BTW you really need to use chicken thighs for the meat too. Because the dish cooks fairly quickly, no more than 1-1.5" thick so the meat will still hold
together BUT tear or fork apart very easily. The white meat of the foul is too dry and the thighs of turkey, pheasant, or peacock are fine as long as you
get the size right. I've never tried ostrich so I don't know. Peacock is a little tougher but still a good choice.

has i recall i felt lousy going out for this meal , i also feel bad about leaving my cats at home for an hour as Magic was feeling bit unwell , was this meal worth it ? i say no it wasn't worth it

Hot dogs in a can? That's a new one for me. I'd have gone for the Vienna sausages instead :cool:

As living in Valencia, It´s offensive to call paella to that.
It's rice with some things on it.
 
Today is Chinese New Year, so 新年快乐 to all Chinese members of ASR!

This is prep for a traditional Chinese New Year dish called yee sang ("raw fish salad"). I have prepped enough for 3 yee sangs. I kept one for ourselves, and gave the other two away. Top row: cucumber (light marinade in salt and sugar), radish (in a light pickle in fish sauce, salt, sugar, and vinegar), carrots (with the same pickling solution), pomelo. Middle row: toasted and crushed peanuts with sesame seeds, and fried wonton skins. The golden appearance symbolizes money and wealth. At the bottom: yam julienne mixed with food colouring and deep fried till crispy.

Not shown are the other ingredients: the fish (I used smoked salmon), coriander leaves, pickled leeks, pink ginger, white pepper, five spice powder, and the salad dressing (a mixture of plum sauce, lime juice, and a neutral vegetable oil).

The contents of the red packets (one has white pepper, the other has five spice powder) are emptied into the plate along with everything else. Everyone then goes at the salad with chopsticks and tosses everything with the sauce until it is all mixed together whilst calling out traditional new year greetings and good wishes for the year ahead.
