As living in Valencia, It´s offensive to call paella to that.Chicken Paella. Shrimp, Mussels, Clams, Rabbit, or Chorizo are all ingredients you can use in the dish. Spanish Saffron, Nora peppers, smoked paprika, short grain rice, Spanish olive oil, diced bell peppers, garlic, chicken broth and salt to taste. Some people use a fresh ground white or black pepper, personally I'm a Cayenne red pepper
guy. Do NOT substitute the rice. Medium or short grains absorb about 1/3 more liquid
If I use shrimp, clams, or mussels I use a dry white wine, garlic and broth to open the shells or just add a pink to the shrimp. The broth is added to the rice about mid-way
and the shrimp or shells are added, the last 2-4 minutes to the top of the dish. The shrimp should snap if they are fresh and NOT overcooked.
This is a 13" pan. I use an 18" for larger gatherings. It's one of my favorites and there are NEVER any leftovers.
