Can RME ADI 2 output a digital signal through it's RCA connectors?

Not the DAC, the PRO has digital outputs but not sure if they get DSP functionality if that's what you're after. I think the cable should be fine given AES is just a balanced version of SPDIF, but I have no direct experience with it.
 
This RME doesn't have digital out, you can use regular XLR analog cables to you monitors, this RME does and you can use the breakout cable and connect a regular AES3 cable to your monitors.
 
Devices that can output digital audio:
  • ADI-2 FS
  • ADI-2 Pro FS R
  • ADI-2/4 Pro SE
Device that cannot output digital audio:
  • ADI-2 DAC FS
 
If you have this RME ADI 2 FS AD/DA that cable should work.

I need to connect Genelec monitors digitally to RME ADI 2. Would this cable work?

 
From the manual for the ADI-2 DAC: “Using a simple cable adapter XLR to RCA, an AES/EBU signal can be received too. To achieve this, pins 2 and 3 of a female XLR plug are connected individually to the two pins of a phono plug. The cable shielding is only connected to pin 1 of the XLR - not to the phono plug.

Yes, signal can be received, on the digital input. That's under section 18. Digital inputs, in the manual.
 
There's no digital out on the ADI-2 DAC

You want digital to digital no conversion
Then why do you have a DAC, since this is a Digital to Analogue Converter (D A C)?
