Look here for reviews of interfaces: MOTU, Focusrite, etc. The cheapest functionality is probably from Behringer.

I do not want a synthesizer - I just want to convert an analog signal from a cassette deck into Digital

I’m using the apple usb-c dongle with my headset and MacBook, not sure what your specific use case is, but it is certainly adequate for that.
