Hi guys, first time posting here.

A little of backstory (side note, English is not my first language).
Found the site couple years back through a search result on an Amir's review on a AKG headphone and I have been lurking it from time to time.
Moved with the wife for a new flat, got a 75" TV and the sound is, for lacking of better words, obscenely appalling. But in comparison all the sound I have been listening from TVs after are similar, or even worse, so it's not a problem limited to my TV. I thought of getting a soundbar, but everything was unimpressive and I'm being nice here, even soundbars with price tags around 1500€ didn't sound near as good as an old Technics 5.1 soundsystem from the last century, not even close.
So here I am asking for your advice on what to get.
The intent is to use the setup to listen music (not MP3, nor bad quality streaming), watch TV/movies with the wife, play PC games.
I want to set an ATMOS 5.1.4 setup, have done some research and made some pre choices that are listed below, prices listed are the lower ones I found by a quick search..

I already got the Denon AVC-X4800H and the Polk ES60, but everything else is undecided, my main doubts are:
A) what to get for central, is the KEF Q650C worth the extra money, should I get the Dali or is the Polk the right choice?
B) is overkill to get the Polk ES20 as surround and instead I should get the Polk ES10 and save some €.
C) is any of the subwoofers listed worth the money, or should I get something else in that price range?
D) what to get for height, again, is the Polk ES10 the right choice, or is the Polk XT90 a better option, neither of them?

I don't have a fixed budget, but I also don't intend to spend extra just because.
If it helps, for reference my living room is 4.4m by 7.3m (14.5ft x 24ft). It has a 3m (10ft) glass sliding door to the balcony covered by a double layer thick curtain, has a 3m (10ft) wood sliding door to the kitchen and a 1.2m (4ft) opening to the hall.
The ceiling is 2.5m(8.2ft) height and has another 30cm(1ft) above the plasterboard. The floor is wood floorboard.
I have a big L shaped couch with 3m by 2.5m (10ft x 8ft), between the couch and the TV the floor is covered by a shag rug, I am seated at 3.7m (12ft) from the TV.
I uploaded a couple of images for better visualization, everything is more or less up to scale.

As a rule, 1st choice should always be to have all the speakers exactly the same. Brand, and model.
When this is not possible, then go for the same brand and product line, preferably with the L/C/Rs being the exact same speakers.
When this is not possible either, go for the same brand and product line and use the best center speaker available in the product line.
Mixing different brand speakers, especially in the front L/C/R, is very risky; unless the speakers sound extremely similar.
Having said that, the ES60 you have already chosen limits your choices as it is a floor stander, and the best center channel speaker of the line is the mediocre ES30 which is too little for the listening distance and has limited horizontal dispersion (as most MTM center channels including the Dali but unlike the KEF).
IMHO your best bet would have been a set of KEFs from the latest Q meta line (quite a bit more expensive though).
If you can't justify the higher cost, (which also includes the loss of selling your ES60s) then go for ES60, ES30, ES20 for the bed layer and either ES10 or ES15 for the ceiling.
You will need at least 2X HTS12 subs and they may not be enough.
If your house is built with bricks or concrete, you can use the AMROC room mode calculator to check the room modes. Use the 3D animation feature to figure the best places for your subs. Subs should not go at nulls of the room modes so make sure that you place the subs at spots that are either red or blue at the 3D graph at all the room modes. These are most likely the 4 corners of the room and for some frequencies it may be the middle of the side or front/back walls. The doors and openings will give you different results in practice but it's a good starting point.
1 subwoofer in that space will get lost and will not even remotely give you the bass you will be hoping for and will have a very uneven response around the room.
 
My advice would be to put the center channel speaker at the bottom of the list. A phantom center will work better in most cases.

Use multiple sealed subs, at least two, but preferably four. 10 or 12 inch subs are fine. They don't need to be monsters if you have four of them.

Remember that ceiling speakers need to be pointed at the main listening position or you will just be getting the off axis response.
 
I would chose the ES10 over the XT90. The ES10 has a 1/4-20 threaded insert on the back for a mount to aim them at your main listening position. The Polk ES15 would be my choice for SL/SR surround sound duty. I own Polk ES60's and perceive greater clarity when I use them with Dirac Live enabled. Consider using Dirac Live with your Denon 4800. Measuring a listening space with Dirac LIve requires a calibrated microphone like miniDSP's UMIK-1. Dirac occasionally discounts the price of their software.

I use a phantom center channel and like the sensation that the sound of the center channel seems to be near the height of the center line of my TV - instead of from below the display. A single Polk ES20 loudspeaker can be a performant center channel IF you have the room to place it in it's usual 'vertical' orientation.
