General sound 'proofing' for flooring, in walls/ceilings/floors between habitable spaces?

What products work well for general sound proofing/deadening inside of walls/ceilings/floor? Specifically for flooring or between floors?
We ripped out the carpet in our 2nd floor bedroom and we are installing new subfloor for hardwood (engineered or other) floors in our 2nd floor bedroom. Long story short some previous homeowner should not have been allowed near tools.
We are pulling out about 8" of insulation that was between this room and the first floor. This floor is shared with most 'public' spaces on the first floor. I'm worried because we removed the insulation sound will travel both ways much easier.

A few examples.

This stuff claims STC66 which seems like more than a stretch if I'm reading the charts correctly.

But also any of this kind of product I can find say the require a floating floor and I like the idea of nailing the floor down.

And if I glue and screw the sub-floor, there is something like this.

I've previous seen a product that goes in wall/floor that spreads out like an accordion, but I can't find anything like that now.

Any suggestions? We are staying long term, and since I do most DIY I feel good about spending some money on doing these projects right.
