There is a setup I saw on here one time where someone was using what seem to be mic stands to suspend Dolby Atmos height channels above their mixing desk, I believe they were Genelecs.

I'm looking to get in touch with anyone who owns a setup like this b/c I thought stands like that would be easy to find but they are not

Seeking guidance on how to get such a stand or replicate it.

Try professional music instrument stores.
 
I use 2 table mic stands by König & Meyer to bring the tweeters of my Genelec 8020a to ear height. The 8020a has a microphone stand compatible mount, the 8030 I think as well (although I don't know whether the stands with adjustable height can carry the weight). Check these models for your application:

K&M 232
K&M 23325
K&M 23320
K&M 23323

Edit: for higher stands you could use traditional mic stands with tripod foot and no extension arm. Go for models with heavy weight since a microphone weighs much less than a monitor.

Yeah exactly I am trying to get direct overhead height channels so the tripod mic stand, but I am not sure how Im' going to mount them and am a complete technical dunce. I can go to the local hackerspace and ask for help but I am hoping someone on here will know how to get started, prefer to walk in someone else's footsteps as it were lol. Any advice appreciated thanks!

The mentioned (online) stores for music instruments/PA/recording materials will be perfectly able to advise you on all the questions you have and can usually also offer solutions in various price classes.
