What interesting and tasty cheese are you enjoying today? This is like the spirits thread but for cheese.

Stilton and a tawny port - most excellent!

Tawny Port 20 years old. Cool. never heard of this before but it sounds delicious.
Almost to die for… if you like port and Stilton as do I!

I had a friend who liked port more than I: “Ports are my life!”

A pleasant Shropshire! Tangy with a butterscotch finish. Quite divine. :)

My favourite local Vintage Cheddar, from the Ottways / Great Ocean Rd region of Victoria (Australia) - it is a "supermarket" cheddar - but remains one of my all time favourites.

When I get the opportunity to visit a specialist cheese store, I like to get some Tasmanian Pyengana Vintage Cheddar - that is a definite step beyond - but it is one of the best cheddars bar none.... (and priced accordingly)

As a cheese related aside, last night we ate at a superb Italian restaurant, where I enjoyed a Gnocchi Gorgonzola - perfectly cooked Gnocchi, with a light (yes light!) sauce of Gorgonzola, Provolone and cream.... now I will admit that Gnocchi gorgonzola has been one of my favourites for decades... but this was the best rendition of it I have tasted to date....

Always a legendary combination!

Although I have always wanted to try the traditional "gentleman's club" version, where they hollowed out the center of a large stilton, and poured port into it, then kept doing that for several months, before serving the port marinated stilton.... (Hence the tradition of shipping stilton in ceramic jars... )
