I'm an older man and demmed a lot in the 70's and 80's UK audio scene...

Joan Armatrading
Tracy Chapman
Carly Simon did some good stuff
(so did) Janis Ian
Grace Jones (Nightclubbing and Slave to The Rhythm......)
Gregson and (Christine) Collister
Kate Bush and Stevie Nicks (yes, I know - o_O cough ;) )
Barbra Streisand?

Sure the arrangements and often superb mixing and mastering comes into it too. many more that have passed me by as well..

Katharina Nuttall (all three records are great)

Beth Gibbons (only one release)

Sarah Blasko

Michelle Gurevich (Female Leonard Cohen, lovely dark humor)

Camille O'Sullivan (many covers that beat the originals)

Francoiz Breut (French, but really interesting sounding to my ears)

Lisa Lindal (only one album released)

Edit: Examples added

Sophie Zelmani I've listened to since her debut, so no examples needed

As far as current artists, I saw Brandi Carlisle a few months ago. Thought she was really good.

Gotta ask... what are you into? You say "Nice" music. You want polite parlor style, or are you open to anything?

If you like Patti Smith, you should be listening to some PJ Harvey and the Kills (Alison Mosshart is vocalist). Johnette Napolitano (Concrete Blonde, Pretty and Twisted).
Perhaps some Cowboy Junkies (Margo Timmins, vocalist).
Eleni Mandell, comes to mind.
You may like Cat Power. Devil Doll borders on a rockabilly vibe, and Imelda May too.
If you like the Cranberries, you may enjoy Shirley Manson in Garbage.
I'm very fond of Monique Ortiz (Bourbon Princess, AKACOD).

Thanks for helping me discover Portishead and Beth Gibbons. Looks like their albums are mostly mastered really loud though - too bad. Maybe the vinyl is better.

Edit - looks like the Rustin Man album is DR 10. I like this one so far.

Have you listened to Faye Wong? I discovered Sophie Zelmani through her - she covered a song.

Portishead should be OK. If you listened to a live song on YT there's at least one which is volume raised into distorsion levels.

Yup, fully aware of Wong. Have uploaded a song on my own channel. Think it's called MW

Edit: Here it is:

Maybe Che Aimee Dorval? She has an interesting, pretty unique voice.

She sings in the great project "Casualties of Cool", too (if you don´t mind some male vocals here and there). Interesting and very distinct production, too.
