For some of us geezers the original PlayStation was a <wait for it> - game changer; and the game that did it for in-game music was >>>

While Tim Wright (CoLD SToRAGE) was responsible for much of the music; we also got

"Afro Ride" - Leftfield
"Chemical Beats" - The Chemical Brothers
"Wipeout (P.E.T.R.O.L)" - Orbital

Now - THAT - was a cool game!

The Minecraft OST is horribly underrated.

I think that a lot of my fondness for minimal music stems from playing Mechwarrior 2 as a kid. Still a favorite of mine, both the music and the game itself.
 
Best video game soundtracks I've ever heard, by a wide margin, are the following.

Crash Bandicoot 1 and 2 soundtracks - these are the high quality pre-console mixes - I wish Mr Mancell would sell them on CD and for downloads:

Celeste soundtrack:

Portal 1 and 2 soundtracks

Half-Life 2 and Episodes soundtracks

Depending on your style:

Mass Effect Series (4 soundtracks)
World of Warcraft (at least 10 soundtracks)
Horizon Zero Dawn
Final Fantasy (at least 20 soundtracks)

There is a lot of crossover now between today's game soundtracks and movie soundtracks. I could just as easily name those.
