Those are probably my favorite covers.

Johnny Cash does a cover of a Trent Reznor song. Cash died 7 months after this recording. It is almost like Trent Reznor wrote the perfect song for the end of Cash's life.

Multiple artists cover "While my guitar gently weeps", but Prince is the standout in the latter half. Wouldn't say it blows the original away, but a good cover.

The album is apparently scheduled for release later this year, but a single from the album was just released, an absolutely wonderful cover of Donny Hathaway's The Ghetto by one of the legends
George Benson's 1999 (released 2000) album Absolute Benson (GRP/Verve) has this fabulous version of The Ghetto...

Satisfied Mind was written in 1948, and has been done by lots of people. Porter Wagoner recorded it first I think. I think this is the best version over those by Johnny Cash, Willie Nelson, the Byrds, Bob Dylan, Darryl Scott and others. This one is from Jeff Buckley.

John Bonham's son Jason and Heart cover "Stairway to Heaven". Quite something to cover a song with the original artists in the audience and move them to tears.

Bonus Heart cover of Zeppelin's Rock and Roll.

Nirvana cover of David Bowie's "Man who sold the world". One of a few good covers during that Unplugged concert. Curt Cobain would be dead of suicide less than 5 months later.
