Is there a way to draw a center-on DPDT switch on a schematic?

Pos 1 – Terminal 2 connects to 1. Terminal 5 connects to 4. Terminals 3 and 6 are disconnected.
4—5 6
1—2 3

Pos 2 – Terminal 2 connects to 1 and 3. Terminal 5 connects to 4 and 6.
4—5—6
1—2—3

Pos 3 – Terminal 2 connects to 3. Terminal 5 connects to 6. Terminals 1 and 4 are disconnected.
4 5—6
1 2—3
If I use something like this then it doesn't appear possible that 1 can connect to 3 and 4 to 6. I'd have to annotate with lots of text.

What model/make of switch is that? I have not seen a variant with middle position connecting both contacts in each pole.

Maybe a 3-pole switch with nothing connected to the middle one?

I'd have to annotate with lots of text.
"3 pos, center off" isn't a lot of text. ;)

The technical term is "make before break." Your depiction in the first post shows a toggle switch. You would not normally see this type of action in a toggle switch. It's not uncommon in slide switches or rotary switches. But, the switch would need a detent associated with the "middle" position.

Your example of a guitar pickup selector is appropriate. That is a case where you do NOT want the cable to go open when selecting either/both pickups.
For a schematic depiction just google.
