I hope someone can help me because I have read many articles and reviews and I'm unable to decide because I don't know what to expect in terms of quality and sound from these three models of closed backs:

Hifiman Sundara closed
BeyerDynamic DT 770 Pro X LE
BeyerDynamic DT 700 Pro X

I have Fiio K11 and it's for listening to lossless music (files and streaming - Tidal)

I know I have to do EQ on all three, the problem I have is because all the reviews and comments I read talk about the headphones without taking it into account. For example about Sundara they say that the sound is awful, but it seems that the Beyerdynamic are mostly recommended for gamers, and I don't play.

I usually listen to everything from classical to pop. I don't like too much bass and I don't like too much treble either because I have a sensitive ears.
I know I may be asking for something too complicated but, taking into account the Oratory EQs, which one supports the EQ better? or at least, which one is the one that maybe fits what I am looking for? none of them?
Please bear with me, I just started this year in this audio thing and I barely have any knowledge. I compare headphone graphs with and without EQ and I don't know what to expect.

I know someone will recommend the open back ones but I already have (and I love them) the problem is that I need some isolation and no leaks. Please do not recommend AKG.

Thanks

FiiO FT1 ?
I need it now and that one is out of stock everywhere.
Anyway I discarded it because I think it doesn't deliver the kind of sound I'm looking for, even with EQ. I think it's mostly focused on 'modern music'

In that case the Sundara and both Beyers also should not be on your list ?

Next best thing would be Sundara (slightly more expensive) closed or DT700 Pro X (more expensive).
Then there is ATH-M50X..

Let's not forget the Austrian Audio Hi-X60 which really should be considered as well as the HD620S but that one is quite seal dependent.

I haven't found information about the sound style of both Sundara and Beyer with EQ, that's the problem. I have found about FT1 and I understand that it's intended for music genres such as rap, hip-hop or metal.

Actually I have been using M40x for many years and although I notice that in some moments the treble annoys me, I find it a correct sound, maybe because I have got used to it. But I need to change them and I want to try another brand. M50x is too bassy for me.

I don't know if it helps but from the open back I have k702 and I love it, but I don't know if I can find something like this with a little more bass and controlled treble in closed backs.

I don't think you know how "sound styles" and EQ work.

Yes, there are house curves that make certain headphones particularly unsuited to specific genres and less egregious with others, out of the box.

A neutral headphone OTOH will perform well with any genre.

Using EQ, you can correct almost any headphone to sound neutral, therefore getting rid of any sound styles and resulting genre matchups.

I would +1 that. If you get the EQ right then everything (rap, games, classical) should sound right.

Generally if you are willing to do EQ then you should be looking for the lowest distortion / cleanest group delay. This gives you the most flexibility in how you set up the EQ.

Sennheiser 620S is a solid choice. I am using mine without EQ and am quite satisfied. I just purchased a second one during Amazon Days for an exceptional price. I had it shipped to Amir for testing before it gets shipped to me. Once he tests it I am sure there will be EQ recommendations.

Nice, I am waiting for Amir to review it also, what was the "exceptional price" you have paid for?

Bought first pair a couple of months ago from Amazon for $299 shipped. Second pair - last week for $237 shipped. They might do better on Black Friday, but that is not certain. I wanted a second pair for my other headphone listening station.

I'd go for Beyerdynamics DT700 pro X. They sound much less shrill than DT770 pro X LE (not that much of "Mt. Beyer" in the top octaves). And IMO DT700 pro X feel and look a lot better aswell. They're also pretty easy to drive, got nice lows out even with an old Samsung Galaxy A32. With a little bit of EQ they'll sound superb.

but wheres the removable headband gone to? Is that not worse long-term if its not user maintainable or can you still change them somehow?

You're right - apparently there's no removable padding in DT700proX as in DT770-series which is a shame.

I do not own DT700proX, I've only tested them a few times so I'm not aware if the padding is changeable or not but I suspect it is unfortunately glued to the headband.

So a hard pass?
Apparently theres something. It appears to be snapped in.
Hopefully the receiving end (female) doesn't break off if you do so.

So it is in fact replaceable. That's great news. I don't think the female end is easy to break. By the looks of that headband padding, the attachment is with plastic clips whics presumably fit into female slots in the headband.

Great... But unless they provide me one that has fontanelle cutouts it's still a pass for me. I got a oval head shape.

I've got an egg-head like Hercule Poirot. Hard to find headphones that do not start to hurt my scalp during long sessions.

I believe DT770 Pro X LE has a headband with a cutout at the apex of the padding of headband.
