From these and all I have read about the products, it appears they offer great value for money, but still for me it’s a bit of of leap of faith as I have no opportunity to hear one before I spend a lot of money.

From a value for money perspective, within my current setup would one of these be a better option than one of the big name offerings such as the Mission 778x or Audiolab 6000 for example, both of which are in a similar price band once you’ve added VAT.

I've had Crown, Lab Gruppen, Denon and now Hypex amps. It's a rat's hair the difference and even more so if using for a surround system ( which I don't think you are ). Essentially any Hypex based amp will sound the same. Perhaps find one that supports money back within x days. Once you've heard one Hypex you've heard them all.

In terms of what I’m looking for, I guess I’m just searching for that extra ‘something’ like we all are. I’m generally happy with what I’m getting from the Ultra/V3 Mono/Oberon 5 setup but wondered if one of these Nord Amps would give me more power/resolution/depth/soundstage etc.

But if there is a view tat I’m just moving sideways rather than up, maybe I need to think about it a bit more?

Assuming the Ultra and Oberon 5’s stayed, what would an amp upgrade look like - or is it all ‘in balance’ and doesn’t need fiddling with?

Power? Yes. Resolution/depth/soundstage no (whatever "resolution" and "depth" are).
 
I’m very confused now
Am just a casual amateur, but the general feeling here is that unless very badly designed with poor parts, all amplifiers sound very similar. So "upgrade" for more features, aesthetic appeal etc, but possibly better spending any "spare" $$$ on better speakers rather than on the electronics......

Pretty much - YES!

Speakers are 10 to 30 times more important than the choice between a good and an exceptional amp (Purify amps are exceptional).

Just look at the Frequency Responce to get a feeling for the differences between things which includes mechanical parts and ELECTRONICS!
