NDH-20 and NDH-30 use Neumann's own developed drivers.
They just 'borrowed' the Sennheiser HD630VB enclosure (for the biggest part, not exactly the same).

trying to decide between ndh20 or HD-560s

HD560S (open) is more neutral with a small lower treble emphasis where as the (closed) NDH-20 has a warm tilt to it with a s slightly recessed upper mids.

Very neutral (as in not Harman boosted) closed studio headphone, which is accurate rather than 'fun' is the OLLO S4R (1.1)
The open S4X (1.1) has a warmer tilt to it, would not call it 'fun' either but warmer neutral.

Studio reference headphones are tools to be used in studios and not meant to be 'fun' nor 'silky smooth'.
You should look into the consumer headphone pool for that.

Many people believe that if something is used in a studio it must be suited for hifi as well but for most studio headphones this is not the case.

Very different damping (resonators), different position of the driver (relative to the center of the headphone) so probably some improvements or at least changes in performance over HD560S/400Pro. So while the chassis/motor/membrane may be the stock HD560S driver the different damping/placement scheme will still make it different.
With EQ the differences will be smaller but most people still use headphones without any EQ in which case even small differences could be worthwhile.
Different comfort and build quality, fit and finish + Neumann name (which counts in studio land)

HD560S driver as a comparison to the driver pics in the head-fi thread:
