Mixing on headphones are creating problems or is it a myth?

Everything coming from multiple mic's is incredibly hard to do....
This is probably why there are so many (lauded) orchestral recordings that just grate with me - you however, sound like you have worked out how it's done, so hats off to you!

I didn't do much classical recording. When I did, I just put up a stereo pair with good results. But I didn't travel in the classical world much, and frankly recording like that is not really all that interesting so I didn't pursue it.

Most of the work was live jazz, blues, rock, folk, zydeco, etc. contending with a PA system and on-stage monitors bleeding into everything which made for a much more challenging situation. Adjusting the levels on the fly to put whatever is supposed to be on top of the mix on top of the mix, and riding the audience mics so that it sounds "live" without muddying up the recording are some of the things you don't need to do with classical recording style.

And since rock bands are almost never recorded via a stereo pair, if you try that the results will probably be disappointing.

At least with mixing for Film and TV it is a no-go, no matter whether the result will be stereo or surround.
One simply hears too much detail and would mix a room tone or any soft ambience too low.
I did this many years ago with a short film and did redo the mix.
