Our brains are pretty smart. The auditory cortex (and the visual system) is very plastic for the first few years. We can pick out and follow individual conversations when multiple people are talking.
It would be plausible the MIT mechanism is at work in separating instruments in music, and even some things like "soundstage."
Our hearing might have a higher layer as is found in reading where we rapidly evaluate the word, with the possibility of error, move on, then back up if the sentence is not making sense.
