And it's all kinds of offal - tripe, lungs, kidneys, bone marrow, tendon, tongue, liver, brains

That's what you get told about everything we state to not like.If it smells like shit (I'm not criticizing your dad) they haven't been prepared well.
Welcome back my friends, to the show that never ends.Affol word association?
Nice, that's given me an idea of what I'll do for a light & late & simple evening meal today - something with a tin of cannellini beans and same kind of soupy consistency as what you've got there. I'll add some vegetables from the garden, and probably but a little chorizo in there, maybe a little bit of chilli pepper, and garlic of course. I'm gonna go for a little bit of red wine with it, as I want to save my remaining can of beer for tomorrow, best laid plans!Well, this was just sweet. Like childhood (and of course, in Balkans we start drinking very early... ) Just a plate full of beans, home made bread and a glass of beer. Lovely.

Similarly, I think there is a 'stench' associated with cooking kidney... and we all could guess at, what that smell is!...and the kids had the disgusting job of cleaning and boiling the tripe....
Something similar is afoot when cooking all organ meats.Similarly, I think there is a 'stench' associated with cooking kidney... and we all could guess at, what that smell is!
There is - there also is with most meat**. But since I was brought up eating liver and kidney and even heart - I don't have a problem with them. Unlike my Dad's tripeSomething similar is afoot when cooking all organ meats.
I was raised on a farm. We had many kinds of food birds, pigs, steers, heifers and always a milk cow (One was veryyy aggressive and almost killed me and one was a beautiful winkling eyeballs lover of humans... LoL.) . We ate everything and all the skins where sent off so they would be tanned and ready for carpet sorta use. So we had brains, headcheese, offal and most delicious was stuffed heart. Stuff it like a turkey or chicken and it is wonderful. There is - there also is with most meat**. But since I was brought up eating liver and kidney and even heart - I don't have a problem with them. ** Pork especially. My daughter in law is of Indian heritage, and vegan. Mostly when she is with us we all eat vegetarian - but on some traditional occasions we'll also cook meat. One time when she was here, and there was pork on the menu she smelt it as similarly unpleasant as some here are referring to the smell of offal. She got embarrassed after she had asked what the awful smell was when she realised it was our food.

I wasn't raised but my Aunt and Uncle also had a farm on the Illinois-Iowa border. Our main livestock was pigs but we also raised a few of just about everything you can think of. That being said I don't remember any offal ever being used for human consumption, the pigs ate everything we didn't want.I was raised on a farm. Sigh* Cabbage smells awesome when boiled especially with cabbage rolls and Newfy boiled dinner. Have you had boiled dinner with all the veggies like cabbage, turnip, carrots, potatoes and stringy dry old style corned beef with sweet boiled desert cooked in it too? It's amazzzzing!cabbage
RFLMAO... Dood! The pigs attempted eating me a few times. I had a very very strict stepfather and I was under orders not to step a foot into the pig pen without a 2x4 in hand to clobber them over the head when they would attempt to drag me down in the mud and mire.Kind of like cooking cabbage. LOL

Ha, I didn't say I don't like cabbage. Specially St Pat's day style corned beef & cabbage, big slab of butter on the cabbage, a little salt, yum.Sigh* Cabbage smells awesome when boiled especially with cabbage rolls and Newfy boiled dinner. You damn right on that! I told you we raised pigs, we'd have around 20 or 30 preg sows running around most all the time, talk about a mean bitch! Don't let her catch you in a pen corner. The pigs attempted eating me a few times.
I shred it and sautee in a pan with butter, pancetta and garlic. Or you can use caraway seeds to flavour which is a fantastic combo. No need to boil it to death! But still I think most people will agree it stinks when being boiled.
Interesting variations of the basic recipe, thanks.I shred it and braise in a pan with butter, pancetta and garlic. Or you can use caraway seeds to flavour which is a fantastic combo. No need to boil it to death!
Does it work... to rid of the 'stench' if you cook it in tequila?I can't go near kidney or tequila ... they weren't in the same meal
I'm not prepared to find outDoes it work... to rid of the 'stench' if you cook it in tequila?
