Is it okay if I just use a portion or half of the ground wires soldered to the XLR microphone cable?

You only need one ground wire, which should be the shield.

If you have room inside the shell you can solder multiple grounds (including the shield) to a thinner wire for soldering to the terminal, and then put heat-shrink over where the wires are joined.

Yes, it is fine to do that.
