How much have AD and DA chips advanced in RME units from Fireface 800 to current lineup?

ufx 3 is an usb 3 audio system.
if it's a real usb 3 port perhaps you will have better performence with low buffer size for playing vst plugins and instrument.
if you can work at 64 samples or 32 samples with your Fireface 802 without clics and pops stay with it.
optimise your os for low latency, update the firmware if it possible, use the best port for audio performence : usb or firewire.
total mix is compatible with your the 802.
i don't think there will be a huge difference with the sound between this two interface.

With some soldering skills the output caps can be replaced for improved sonics. Cheap chinese caps in the audio path is not great.

What is wrong with the caps being used now, and do you have measurements or controlled listening tests indicating a problem that needs to be addressed?

How would a person go about selecting a cap that would lead to these improved sonics?

I would just experiment and do A/B listening tests. A very cheap route is slime green Muse caps with same value as original, they sound pretty decent. But V-cap Reference is probably the best. Or Duelund PIO CAST silver.
 
Why would you bother experimenting unless you had good reason to believe that all the time and effort (and a little bit of money) needed to swap out the caps would be worth it?

And how would you do A/B listening tests of the unit before and after the caps have been swapped out? You can't listen to it each way at the same time.

You're right to be skeptical. Don't do that stuff.
