help! HIFIMAN SUNDARA or HD560s

AFAIK the Sundara Silver Edition is technically identical to the black Sundara (2022) Version.
Regarding QC-issues: I had 10 Hifiman headphones over the years and never had any issues with them.

This sounds...unlikely. Can you be a bit more specific? Clean, neutral amplification is trivially easy to acquire these days...

Actually not only was it stated, but the changes are visible.
The driver isn’t the same, and the dampers are different as well
 
My main music headphone is a Hifiman Edition XS (open back), and I also have a now rarely used HE400SE (open back) which is a similar design to the Sundara, but I still use Hyper-X Cloud 2 for gaming and they also do very well for music when I'm in between games.
Before I picked up my current Cloud 2s, I used my AKG K361 (closed back) for gaming but couldn't get a mic solution I was happy with.

I wouldn't personally recommend open back headphone for gaming unless you are in a very quiet environment or live alone as you will hear everything as if you had no headphones on at all, and everyone else will hear your headphones too.

Planars especially are very open with just a thin membrane covering your ears.
Maybe the 560s is acceptable, but I have never tried them or any other Senny's, they are reportedly good for gaming but very flat/neutral (the famous Sennheiser veiled sound) for music which is an acquired taste if you are used to "fun sounding" mainstream headphones.

If I were you I would keep the HyperX for gaming (assuming they are cloud 2/3/alpha and not the horrid stingers), and get some Hifimans for music.

When you say Sundara, do you mean the black model or the white one?
I’m asking because they have slightly different tuning. In fact, the white model is essentially a Sundara mk2

Not mine... just pictures stolen from the web after a google search for 'silver Sundara'.
The different grille could result in a very slightly different response.
