Headphones that create the least ambient noise possible?

Hey, I mostly use my headphones to listen to random podcasts or youtube videos while doing other things, I'm looking for headphones that i could wear for long periods at a time where no sound is playing without noticing them there whatsoever.
I'm looking to minimize sounds like the pads rubbing against my hair, the cable rubbing against my shirt, etc.
There might be something really wrong with me but when there isn't a constant stream of sound playing, like when I'm listening to people talking instead of music, any teeny tiny bit of ambient noise that comes through is really distracting to me. To such extent that I can hear the hinge of my neck rotating while wearing certain earbuds and headphones (jabra, FT1).
I know this is a pretty ridiculous requirement, but I'd really appreciate it if you could please help
 
Not a ridiculous requirement, what you are describing bothers lots of people to an extent. The usual term for sounds that come from the headphones moving / touching things is "microphonics".

I don't have an awesome suggestion for this off the top of my head, but if you look for earphones or headphones that are reviewed as having low microphonics you will be on the right track.
 
Removing the cable (ie Bluetooth sets ) will help as the cable can be a major source . But you'd want to disable any mics etc.
 
Seams you need higher grade TWS but I stopped following so can't recommend any. Anyway what I can is memory foam ear tips with IEM's for improved both comfort and seal and with it isolation. So avoid TWS with property or unusual (diameter) bore. Even cheap KZ one's will work just fine, just make sure you buy right size.
There is always a noise cancelling closed back over ear BT designs.
I am much less picky regarding isolation and even microphonics too a extents. Like more the "open" earbuds on the go and being aware (that are everything but easy too put on but easy to forget about while just sitting in even on hot sunny day). IEM's simply never worked for me on the long run (touch issue) however I still prefer them for noisy work around the hause and use old Sony HM755 for they short back neck cable and with Hiby W3 II or even it's own old BT (for FM radio). There are also hooks of different kinds; on enclosure itself or cable over ear backwards which will moderate limit their movement that is if you can put up with that and something like that could work for you (not wearing glasses).
You could make costume short cable which suits you the best, hell you can even clip some mini BT receiver at the side or on headband (if it's not thick) FiiO FT1 will be more than happy with anything that can give 1V output but that complicate use and requires Android phone (for LDAC high at least). Anyway idea is that with design you remove what annoys you the most. For me that are speakers (when I can).

Good suggestions here. I've had good luck with the ANC-enabled Jabra buds and foam tips.
 
Since this is for podcasts, etc. and you want to wear for extended periods, then a pair of decent, lightweight, on-ear headphones might be appropriate. Something like my AKG K452 would fit the bill, but I don't think they make them anymore.

For TWS I got airpods and they work great for me, I'm looking for something for my desktop setup.
i realize that the mechanical noises headphones make really stand out with noise isolation so I hope that maybe open backs would be better for it

I know what you mean. My AKG K371 sound great, but are annoying to wear for extended periods because the cups are a little small, my ears get hot and the single cable entry (with a long mini-XLR connector) bushes my collar and is terribly microphonic.

I find my Sennheiser HD 660 S are light and comfortable for extended periods, but I know that others find the clamping force excessive (this is easy to remediate by gentle bending of the headband).

My other open backs are Drop + HifiMan HE-4XX which are bulkier and heavier than the HD 660 S and not nearly as comfortable to wear.

I've also owned AKG K712 PRO which were approaching the HD 660 S for comfort, but the for me the clamping force was a little light and i'd notice them moving around on my head (they also had a similar issue to K371 with single cable entry via mini-XLR, but I didn't find it as bad - maybe because they're open backs).
