I have a pair of Grado SR80x, Sennheiser HD560S and Hifiman HE400SE. The measurements tell me I should prefer the Sennheiser and Hifiman.... but I keep going back to the Grado's. I guess it's the treble boost, as they sound way more open than the other two. There also quite refreshing as they're the polar opposite of that muddy mid-bass sound that I get from most bluetooth headphones I've tried.

Yep, upper mids, lower treble and upper treble peaks are responsible for this 'effect'.
Using the HD 560S with boosts in the same area's and sharply rolled of lower bass will get you a very similar experience.

I just threw out a pair of SR60s I'd owned for forever, The foam was too rotten to use anymore and I couldn't talk myself into paying for new foams only to sit on the shelf till it too rotted away. I've got my decades old HD650 for that. LOL

The only time I can be kinda specific with EQ is when I boot up a computer running Linux. Most of the other time (Mac, iPhone, vinyl, cd's etc) I'm limited. That's where the Grado's win, as I can just stick a generic bass boost on them, and they sound great.

I received my replacement ear pads for my SR80, I like my headphone even more.
Just amazed at how much a difference do ear pads have on what I hear.
