Epic Road Trips

I am asking for travel advice!!

I will be in Sydney for three weeks between December and January. We would like to see something in the area between Sydney and Brisbane.
What is worth doing?
Any suggestions on cities or towns to see that are beautiful but not too “touristy”?
Time to invest 5/7 days. Thanks to anyone who wants to give me some tips!!

Ps we have already done Melbourne the Great Ocean Road and Adelaide. We want to see the part north of Sydney.

Zenith Beach, close to Newcastle. It is gorgeous but beware of the sharks. Nearby are the Stockton Sand Dunes, but you will need a quad bike or a 4WD to see it properly. Also stop by Fingal Bay. The night sky is really clear, bring a camera and tripod and take pictures of the Milky Way rising over the ocean.

Forster - home of retired Sydney millionaires. It's stunning.

Byron Bay. I wouldn't say it's "touristy" because it's not so easy to get there, but a lot of celebs have homes there - e.g. Chris Hemsworth, Matt Damon, Tim Cahill, etc. There are some really nice beaches in Byron, including some almost empty secluded ones. I recommend Kings Beach.

I personally don't think 5-7 days is enough. It is a long drive, and Australia is a huge country.

Thank you so much Keith. Yes, I noticed when I did the Great Ocean Drive: the stops set on the map then made me sweat a lot in the car, especially the last one to catch the ferry to Kangaroo Island in time!!!;)

I know! Unfortunately time is a tyrant!!! We only have 3 weeks and we want to dedicate one of them to a tour!
I will carefully look at the places you recommended!! Many thanks!!

Don't forget the food! Since you are coming from Europe, you should try some of the seafood you won't get back home. Sydney Rock Oysters, yabbies, marron, Akoya Oysters (it's a cross between a mussel and an oyster), and of course the fish - murray cod, flathead, King George Whiting. There is also shark, but I think shark isn't great. The texture is a bit gummy and there is a faint whiff of ammonia - it needs a lot of lemon to cover it up. Australian beef is amazing and it is cheap compared to Europe, especially if you go to a steakhouse in a country town.

oh sure!! I've already had the chance to try your delicacies!!
Your wines too, I went to visit a winery just outside Adelaide!
Really good beef, different from ours, really even from the USA and South America.
Even the fish is different: we are used to small crustacean fish and molluscs, from the Mediterranean.
We had dinner in fish restaurants and we had a good time.
