If copper reacts upon skin contact, it's to sweat, not grease. This should be avoided.
Excessive skin contact should also be avoided, as copper is mildly toxic to humans.
Regardless, the strands of speaker cables should always be crimped with ferrules before being screwed/clamped into the connectors. This prevents oxidation.
Copper is toxic if consumed in excessive amounts, the skin acts as a barrier to absorption except in extreme cases. Handling of bare copper does not pose a risk.
Oxidation can still occur when using a ferrule. A ferrule does not provide a gas tight connection. Oxidation and corrosion can also occur between the ferrule and the connector because of it not being a gas tight connection and the potential for dissimilar metals being used.
