Yours is a very classic approach, basically a 1:2, which probably suits your medium roasts well. I also use a lever machine, by the way, and would never go back to pumps. Lever 4 ever.I do 16.6gm dose / 34gm yield, in ~32seconds.

My Austrian mother likes all cheeses! I was concieved in the USA but born in Austria. Apparently I did not get the "cheese gene" as there are a very few "soft" cheeses that I like.There are plenty of cheeses that fill that niche.![]()

What grinder do you use and how finely do you grind?It does have a knocker. While no grinder has truly zero retention, it's virtually negligible. In my experience, retention is typically under 0.2 g and often closer to 0.1 g. My NZ retains about 0.3 g if I blow out the chute, and using a more powerful blower from the NFC disk can clear as much as 0.5 g. The Lagom Casa, by comparison, retains less than 0.2 g, which is very impressive considering its grinding performance..
My only real complaints are that it grinds a bit slowly and produces a somewhat high-pitched noise. It's not particularly unpleasant, but it's not especially pleasant either. Overall, though, for the price, it's hard to ask for more.
