Checking Native Sampling Rate (Were my files upsampled?)

Well, yes, a file with 192 kHz sampling rate can have content only up to 96 kHz, i.e., half the sampling rate.

That's nice. Do you know how high the spectrum view scales up? Does it go up to 192khz?

Yes, it will always have half of your sample rate as upper limit so with 384Khz files it will go up to 192Khz
Just load the file in Audacity and select the part you want to analyze.
Then select analyze->plot spectrum.
Now you can select fft size and window to adjust the display
