To avoid using splitters, I used balanced to unbalanced cables out of my DAC to connect my subwoofers. Is this okay? Will sound quality suffer?

There's a big difference between measurable and audible. And if it's not audible it hasn't impacted the sound quality.
Actually it did sound worse.

How does a single balanced connection become two single ended connections without splitters?

SQ is only one of the worries.
The other one is the device going doorstop.

S+ and GND to one sub
S- and GND to second sub and then invert the signal at the sub. Failure to invert the signal will kill overall sound quality
