Another pre-amp possibility perhaps is the ART Phono Plus?

Would this work on something like a raspberry pi? Or is a dedicated sound card necessary?

Absolutely you could do it with a PI, but you'd need an A/D board, say a PCM-1802 or equivalent. They are about $3 and will do 24/96k

That would work. Could I do it with an Arduino then? I have a few laying around. Could I then just adjust the amplification by using a pot as an input into the arduino/pi?
