AD Converter best in Class?

No. It is the correct wiring diagram for the fringe scenario of an RCA source connected to an XLR input (XLR Pin1+3 tied to RCA GND.

Any other scheme will bypass the Amp's differential input's CMRR, resulting in increased noise.

This is not a topic to be debated. Just see it for yourself in your own measurements.

Measure the RCA outputs of an amp or a DAC using two connection methods: (1) the cable shield connected on both ends (to Pin 1 on the XLR side); and (2) Pin 1 not connected on either end of the cable shield. Report back what you find later.

Here's a point to consider: A GND loop is not the sole cause of noise possibly arising from connecting a source device to an input/measurement device. In fact, in my experience no shared GND is a more frequently encountered cause of noise (e.g., power supply leakage from the source device needs to be drained properly in the input device).
 
Just ordered adi-2 DAC fs. The manual and videos are awesome. Much better than PRC made DACs.
Just to check: do you need Analog to Digital conversion? If so, that is not provided by the ADI-2 DAC FS... which only provides for Digital to Analog.

If you need Analog to Digital for 2-channel stereo, then you will need the RME ADI-2 Pro FS R or the RME ADI-2 Pro 2/4 SE. And if you need more than 2 channel stereo analog, then look at the RME Babyface or Fireface line.
