Because of my birthday I got also a gift card for Hifman, 300 value. So I would like to know (according to the headphones I own already) which one could be a good choice under for 500 - 700.
I know only the ones I have so I'm really clueless about the other models, like HiFiMAN HE6se but there are more to choose

Hifiman HE400SE is really good with an Oratory EQ, which is somewhat unusual that an Oratory EQ requires close to zero customisations to sound optimal (albeit my HD800 with Oratory EQ doesn't really need anything changed either). I'm not sure what it is about the round cup Hifiman's but I also have the HE4XX and that was tonally spot on with Oratory EQ too, albeit I prefer the EQ'd HE400SE to the EQ's HE4XX (more overall clarity with the HE400SE). There's not really anything missing for me with an EQ'd HE400SE, and they're not expensive, cheaper than your other headphones I think. Might be worth taking a punt on the HE400SE if you're gonna EQ them to Harman Curve, if you like Harman Curve, I don't know......my recommendations are only with EQ here & I have nothing useful to say about what they're like at stock beyond me thinking they're not worth using at stock (but that's the same with all Hifimans). The only headphone of mine that is good at stock is my Sennheiser HD560s, that's balanced very well. Well, the HD600 is also good at stock but lacks bass and doesn't have good imaging/soundstage.

HE400SE review here on ASR:

Oratory EQ of HE400SE:

EDIT: Ok, just seen you wanted a recommendation for 500-700 Euro headphones, but the thing is price of the headphone doesn't matter and is not really related to sound quality - if you're gonna get a Hifiman you don't need to spend 500-700 Euros and indeed if you do you might end up with a worse headphone than the HE400SE potentially.
