I once had a culinary student doing their externship assigned to the station I butchered at during the day shift. One day he asked me about fabricating Guinea hen and how difficult it was.

Without stopping work, I explained that all birds have the same basic structure and that it just came down to getting used to the minor differences. Duck, quail, guinea hen, or squab… which, by the way, chicken apparently are the closest living relative to T.Rex and that if ever T.Rex were brought back to life a la Jurassic Park, he should be able to butcher one with no problem! “Though you might want a larger knife,” I suggested in a deadpan tone, as I flashed my little honesuki at him, continuing to break the hen without pause.
